1 What it covers

ISO 22000 combines a management system with the technical controls of food safety: prerequisite programmes (PRPs) for basic hygiene and good practice, a hazard analysis based on the Codex HACCP principles, and a hazard control plan covering critical control points and operational prerequisite programmes. It can be used by farms, processors, caterers, retailers, packaging makers, transport and storage firms — anyone in the food chain.

IRCA's food safety auditor scheme covers ISO 22000 together with FSSC 22000, and several UK courses are titled “ISO/FSSC 22000”.

2 Who uses it

Food manufacturers, packaging suppliers, caterers, food logistics and retailers. Food safety and technical managers and supplier auditors are the main audience.
